At Pazo de San Mauro the Albariño variety is grown under sustainable practices. There are initiatives that respect the environment within the winery, such as its renewable energy sources that help reduce the carbon footprint, and obviously also move to the field, so that ecological techniques are applied in the work of viticulture where each plot is vinified separately and a manual harvest is performed. Pazo de San Mauro belongs to Wineries for Climate Protection, the first and only specific certification in the sector in terms of sustainability.
